B is for brunch. And there is nothing better than a bomb brunch. The excuse to drink mimosas, bloody s, and nom on hash browns is enough to make a girl giddy. No excuses necessary. Brunches just have to happen every once in a while. It's a fact.
We tried to create an easy but fab brunch that anyone could recreate. From the flower arrangement all pulled from the garden to the ebelskivers from Trader Joes this brunch was easy and absolutely delish. Even the hollandaise sauce for the eggs Benedict is simple--made in the microwave! Recipe below:
Eggs (two per person)
Canadian bacon or thick bacon (we replaced meat with short ribs-- yum!)
English muffins
Hollandaise sauce
Parsley for garnish
Hollandaise:
Melt cube butter in large measuring cup.
Add 1/2 cup half and half, juice of 1 lemon (add more lemon to taste), and 4 slightly beaten egg yolks.
Whisk together until well blended.
Cook at 50% power in microwave for 3 minutes.
Whisk and cook 1 minute at a time until thickness desired.
To reheat, cook at 50% power for 1 minute.
Cook bacon.
Boil pan 3/4 full of water and slide eggs gently into water and cook 3 minutes.
Toast buttered English muffins.
Assemble and garnish with chopped parsley.
Viola!
